Pulled pork - cooked indoors without a smoker

Pulled pork - cooked indoors without a smoker! (You may want to avert your eyes, Pigmeat)

Start with a boneless pork butt roast:




Cut into large pieces:


Brown in a pan:


After browning pieces, coat with spice rub and add to a large pot or Dutch oven:


Lather, rinse , repeat:


Cook in a 225F oven for about 7 hours:


Remove from the pot, discard the liquid which is mostly fat, add some Eastern NC vinegar mopping sauce, and enjoy!



Eastern NC mopping sauce:
1/2 cup Vinegar
5 drops English toffee extract (or blackstrap molasses if you don't mind the suagr)
5 drops liquid Splenda (not needed if using blackstrap molasses)
1 tsp Cayenne pepper
1 tsp Black pepper
1 tsp Pepper flakes


Spice rub:
1/4 cup:
Salt
Cumin
Paprika
Chili powder
Black pepper

1 tablespoon cayenne peper

1 teaspoon:
Onion powder
Garlic powder
Dry mustard
Celery seed
