The neighborhood seems to be overrun with the beasts this spring. Are they simply good to eat or can you teach them tricks?

If you are a dog, apparently both.
jDog thinks they are delicious, and hunts them relentlessly.
One lil' varmint has created a tunnel from under the nearby shed to a point in the middle of her run, a point which is coincidentally ground zero for her Number Two. She has taught the gopher to push the poo away from the hole in the gravel, thereby keeping her potty spot nice and fresh. And for that, I think, she is sparing the critter's life.

Can you teach them to dig underground tunnels for running coax to antennas some distance from the house? And maybe pull the coax through, while they're at it.
(We don't have gophers here, however it is still an interesting question)

I'm sure they can, Chris. The Go-Go Gophers were accomplished engineers. Too bad they'll always be associated with those singing sea cows who stole the first part of their informal tribal name.

Depends on how gullible they are.

Many are known as "pocket gophers". I was envisioning a future where right thinking people could carry them around for protection in case they were accosted by ruffians and hoodlums such as Al Fansome and his ilk.
I can see it now, the victim shouts, "Fire Chip! Fire Dale!", and the bad guys flee for their sake of their ankles.
Remember kids, stray gophers cause a lot less damage than stray bullets.

Maybe we could teach Rabbits to do that.
Then, they would actually serve some useful purpose....

Re eating them (both gophers and rabbits), anything is good with enough garlic and oregano.
