The video is educational for any cook, unless you've already done this or something like it.
As any real estate agent will tell you, we humans love a good fireplace. It may no longer serve as our primary heating source—thanks, electricity!—but ever since that first hominid rubbed two sticks together to create a spark, we’ve been hardwired to gather around an open flame and just stare at it until we fall asleep. If you use a home fireplace to cheer your soul on winter evenings, we suggest you assign that handsome hearth a second job: make it a place to spit-roast whole animals for all your feasting needs.
Yup, that’s crazy. Until you consider the culinary cred you’ll garner when your friends enter your living room to see some tasty beast crisping on a spit as a fire blazes in the background. Practical? Of course not. Amazing? You bet your ability to stand upright and employ critical thinking.
WHAT YOU’LL NEED:
A whole suckling pig (or other spit-worthy beast)
A meat-roasting spit
A fireplace and hardwood firewood
Baking sheets or trays
Aluminum foil
A fire extinguisher

Your fireplace must be bigger than mine. ;D

You can just dig a pit and shovel in some coals. No need to get fancy. Wrap your beast in whatever you have handy, the locals use wet burlap sacks and/or foil to roast goats in, wrap the goat(s), put them in the hole, add a layer of dirt, another layer of coals, and come back at the end of the day and eat. Down in the islands they do the same thing, but with banana leaves as a wrapper and sans the foil. This way you don't lard up your flue. Creosote and lard aren't a good combo to have up the flue. The flames shooting out of your chimney will make it easy for the Fire Dept. to find your house, though.
I haven't been to a goat roast in years. Al goes all them time. That boy is crazy about goats, can't get enough of them.
Another hour and a half until the local pit opens. I may have to saunter over in a bit. Get me a snoot and a couple of trotters to go.
