1/4 cup fresh lime juice
2 tablespoons fish sauce
1 stalk's worth of lemon grass paste

I don't mean to be a wise-acre, like someone we both know, but for me and many of the other menfolk on this board, what's a "salad"?

All kidding aside, it sounds great Corq. I used to share a trailer in college with two Thai friends. I soon discovered that nearly every Chinese restaurant in the area employed Thai cooks who were regular early A.M. visitors to our dump with purloined fixings from their places of employment. Those early morning feeds were amazing. I think that stomach toughening regime is why Mexican waiters look at me in awe as I bolt down their spiciest dishes without a burp or a request for a refill on my drink.

i saw the fish sauce but where's the hot?  Looks good and I would dump chilis or sri racha paste in.
I make an awesome kim chi and varieties of quickbread if anyone interested.
