Title: Show stopper marinated chicken, X-FM style

This was my mainstay during outdoor shows last summer.  I'm sure this is not an original creation, but I like it.

While still at home the night before contemplating a show...

Create the marinade in a medium bowl;
1/2 cup orange juice
3 cloves of garlic, finely chopped (I use a small hand chopper, keeps the smell out of your hands)
~2 tablespoons olive oil
salt & pepper to taste
You could also add some mushrooms and onions, chopped if your like, but may be better added at the grilling stage.

Mix the above ingredients in the bowl, then add the chicken and coat.  Add the contents, chicken and all, to a gallon size plastic bag and allow to sit overnight in the fridge.  The next day, throw in your cooler along with some corn on the cob, still in the husk.  Make sure the corn stays submerged in water for at least an hour before grilling.

Set up your gear, grab a beer, and warm up the grill.

Make a small makeshift pan out of some aluminum foil.  Pour the contents of the bag, marinade and all, into the pan.  Place the corn on the remaining space on the grill.  Arrange the breasts in a single layer, and cook until the internal temp has reached 165 degrees, or until no longer pink on the inside if your forgot the thermometer like I usually do.  Meanwhile, turn the corn every five minutes or so until the outer husks turn dark brown for about 20-30 minutes.  When the chicken is done, pull it off the heat and leave on a plate covered in foil if the corn is not quite ready.  Husk the corn, slother in butter and salt, and eat up.

Enjoy the sunset, and flip the switch ;)

Tried a reciepe extremely similar to this at a small camping trip some radio friends of mine went on this past weekend. Brought out the trusty Tecsun PL-880, the laptop with my RTL-SDR HF/VHF with a 30ft telescopic mag on the car roof and a lot of the green stuff;)

Amazing catches since we were high up on the mountains in north jersey. Heard the pirates loud and clear.

If mushrooms are considered, they should be added. If they're not considered, they should be considered and then added. 

Have you tried leeks? They're great grilled or chopped up in a lot of things. I've made meatballs with them instead of onions and turned out great. May work out here with the chicken too.

Have you tried leeks? They're great grilled or chopped up in a lot of things. I've made meatballs with them instead of onions and turned out great. May work out here with the chicken too.

Get a nice big tube amp and cook the dinner on top of the radio. If it ain't cookin', it needs more power.

For marinades, I like to crush the garlic using a garlic press. It's easy, and exposes a lot more of the garlic juices and oils than does chopping.

I'll have to try this too.  Sounds a lot easier than peeling and squashing, then chopping...

How did I know that was coming and from who? The only thing you've ever broadcast is your smell, and boy does it get out!

The Welsh wear leeks in their hats. That must be why there are so few of them.

It's best to squash the unpeeled garlic cloves before peeling; this splits the  skin which then practically falls off the clove. Some people use the bottom of a coffee cup, but I prefer the flat side of a chef's knife.

It's also not good to use the back side of the knife; I lost a couple of fingers pressing down on the blade side a few years ago. They should carry warning decals.

That's how I do it too, I just typed it backwards...

Coincidentally, I did this very task today. Maybe its not coincidence, but karma.

First, I cut off the bottom. Then lay it on the cuttin' board and put the knife over it and give it a quick smash. I don't press & gently squeeze it- that's asking for trouble. I put the knife with the sharp side away and smack it hard, but briefly. Then the garlic usually pops right out and I'm uncut.

The garlic was for a sautée of mushrooms, leeks, the chopped garlic (see above), and EVOO with tuscan herbs.

When looking in the garlic storage container, I saw I was low on garlic in there and put more from the pantry in there. Then realized in horror that I have not used my store-bought garlic in a couple of weeks. I am disappointed with myself. So I used more garlic than usual tonight in the mushrooms. Yeah, that was the right decision.

To peel garlic, I just give my cloves a good squeeze with my fingers. To neutralize the garlic smell, just take your steely knife and rub your fingers along the blade with the edge situated away from your hand under running water. Easy peasy.

My ex caught me giving my "cloves" a good squeeze with my fingers, and kicked me out of the house...

To peel garlic, I just give my cloves a good squeeze with my fingers. To neutralize the garlic smell, just take your steely knife and rub your fingers along the blade with the edge situated away from your hand under running water. Easy peasy.

Svetlana was an excellent operative. She got the info she needed and used the first excuse she could come up with to get rid of you. That's why she was awarded the Emperor Penguin Medal.

BTW, have you noticed the remarkable resemblance between your current S.O. and Svetlana? They look so much alike they could be twins.
