1. Only grass-fed butter has the right fats that regulate cholesterol, not add to it. Grass-fed butter has the best ratio of omega-6 to omega-3 fatty acids (which reduces body fat) and is a good source of vitamin K, both of which according to a studies reduce the risk of heart disease.
2. It provides healthy fats for your brain and body to create cell walls (membranes) and hormones. The short-chain fatty acid Butyrate, once thought to be bad for you, has been linked to preventing neurodegenerative diseases, increased energy expenditure, and is also anti-inflammatory, further preventing heart disease.
3. Drinking it each morning puts your body in the routine to burn fat all day, helping you trim down overall. CLA (conjugated linoleic acid), found in grass-fed butter, has been shown to reduce body fat mass especially in overweight individuals.
4. “Bulletproof” coffee will give you energy as well as increase cognitive function that you can literally feel when it kicks in for about six hours- and without the crash. Mixed with more healthy fats from coconut oil, this amped up drink will help produce ketones, which are created when your body creates energy from fat rather than carbohydrates.
5. Two tablespoons of butter in your coffee is all you need to replace a breakfast meal altogether, making this a quick alternative for people on the go. Providing your body with essential fats and calories is a higher performance blend than a carbohydrate source like oatmeal.

A local drunk used to eat a stick of butter before he went on a bender to "coat his stomach". The old rummy lived until he was over 80. There may be something to it, but it could have been the massive amounts of blood thinner he guzzled on a daily basis. The jury is still out on his case.

Just read The Omnivore's Dilemma by Michael Pollan, it changed my eating habits forever.  Grass-fed is correct and don't buy anything from grocery stores except items that are on the exterior walls (veggies, fruit, fish, grass fed meats, etc.) rather than the interior aisles (processed foods).

Two interesting documentaries about food choices  are:
1). Food Inc. , which shows the impact of the fast food industry on animal farming practices. Makes you think about what's in the stuff you are eating.
2). Forks over Knives , which shows eating green can make people more healthy. They have a website with some good recipes !

A customer at work mentioned how she went on a fat diet and lost 13 pounds so far. Fat as in meats, butter, etc but low carbs. Also note that the Inuit and other peoples who lived off pretty much whale blubber had no heart disease, obesity, or cancer until they gave up raw food for the processed food the explorers revealed to them.

I tend to eat LCHF (Low Carb High Fat). About 70% of my calories come from fat, the rest is protein, with carbs as just trivial amounts, I try to stay under 20g a day, some days are under 10g.

My own take on nutrition is that there is no one size fits all diet for humans, and much of the apparent contradictions from dietary studies is due to that. From an evolution / survival of the species point of view, you different people to have different dietary requirements. Everyone eating exactly the same thing is how a species goes extinct. There may well be some geographical variations as well.

So you need to find what works for you. Note this means find what works for you, not what you pretend works for you because you like to eat it. If you're eating the typical American high carb moderate fat diet (pizza and chips and fries and ice cream and pasta and so on), and have Type 2 Diabetes or other medical conditions, your diet is not working for you. And of course your doctor and nutritionist are probably telling you to eat less fat, lots more "good carbs" (except there's no such thing as lots more good carbs for you) and increasing your doses of the cocktail of medications you're taking.  And you're going to get sicker and die. Every time a foreign culture switches to the high carb moderate fat junk food Western diet, they start getting sick. Every single time. Without exception.

I am sure there is a subset of the population that does OK on, or at least tolerates, a low fat, low protein, high carb plant based diet. But not me, I know that from experience. And most likely not most of the population. We know that from the experiment we did starting in the 70s, switching people over to that diet. Incidences of Type 2 Diabetes, heart disease, etc all shot up. Dramatically. We've got the data, it doesn't work for the general population. It's a disaster.

I suspect at some point we'll have medical tests (DNA or otherwise) that will tell you what your optimal diet is. Until then, you need to experiment to find out. And unless you have one of the rare open minded doctors/nutritionists, ignore most of what they tell you, which is just a regurgitation of the party line diet, the infamous food pyramid product of your government and the best lobbyists the grain industry can buy.

And of course forget the raw food crazies. Humans have been cooking with fire for hundreds of thousands of years, possibly millions. Which means before we even were humans. Our digestive system has evolved to require many foods to be cooked, so we can extract the nutrients from them. There's a reason raw food proponents are super thin. They're malnourished.

Now time to get off my soap box, and start the grill  ;D

People have finally realized .gov was wrong (as usual when it comes to nutrition) and eating butter is healthy.

Europeans are eating so much butter that the bloc’s stockpiles are nearly empty, adding to a rush of demand that has sent global prices skyrocketing:

I just contributed to the worldwide butter shortage by devouring tasty cinnamon raisin bagels slathered with savory real butter!

Keep in mind the alcohol. Southerners have had much the same diet, but with the "demon liquor" teetotaling attitude, there was a lot more heart disease in Dixie than Europe.

That's how we heathens have been outliving those pesky Baptists and Methodists for decades. As a neighborhood coot and former terror told a preacher trying to get him to convert as he was escorting the Man of God off the property, "See ya in Hell, preacher. We both know we're goin'. You're gonna get there early if you don't lighten up."

Why don't Baptists have sex standing up? Someone might see them and think they're dancing.
