So right now I’m running about 60 watts on 6915 kHz which works well. But I’m wondering if there’s an amp out there that will allow me to bump that up to maybe 300 or so. Any ideas?

There isn't really and most are fairly crap.

However anything with a BLF188XR in is fine and only needs 3W to drive it.

Sure they're $500 but will just about give you the power you want (800-1200W pep, 200-300W carrier). Plenty of cheap (server) PSUs around to power them.
