Have you ever tried soft corn tortillas instead of wheat ones? I don't know if they would be lower in gluten, but they're a heckuva a lot easier to work with than their wheat flour cousins. There has to be a number of Latin markets in your area that carry them.

I get mine from a little lady who runs a small restaurant with her husband. She was stunned the first time I asked for them for my quesadilla's. She said she'd been up here for 20 years and no gringo had ever asked for them. My Junior High/HS buddy, Dino's, Mom made them fresh every day. Our crew would stuff ourselves and flirt with his sisters until Dad came home and ran us off.

Gluten is a protein, so it's not a problem on a low carb / keto diet.  It's the starches/sugars in regular flour that we're trying to avoid/reduce.
